Quick Pasta cheer me up

I had some very nice Salsiccia sausages left over and needed to make a quick lunch. It became a real success. It does not take longer than the pasta to cook. Perfect since we were hungry and forgot to take a photo.

  • Salsiccia - about 100 grams per person
  • Chopped red onion - about one tablespoon per person
  • White wine vinegar - just a splash
  • Tomato puree - one tablespoon per person
  • Olive oil
  • Parmesan
  • Pasta
  • Black pepper
  • Salt
Turn on the pasta to cook and create the rest while it is cooking. If the Salsiccia is not cooked, fry them and put them aside.
In a frying pan, fry the onion in olive until soft.  Chop the Salsiccia into pieces and put them with the onions. When the sausages are warm add a splash white wine vinegar and tomato puree into the mix. Stir so it blends well. 
When the pasta is cooked, put it in the frying pan with the rest and stir so the pasta picks up the tastes from the pan. Add a handful of grated Parmesan, salt and black pepper to taste and blend it together.

Serve in a bowl topped with some grated Parmesan.

Pancakes!

We just love pancakes in our house, all shapes and sizes of pancakes! As we are in Sweden, we usually eat Swedish pancakes, duh!

Joking aside Swedish pancakes are thinner and bigger then say American pancakes and the recipe differs a bit.  We are not going to share our best pancake recipe, but will give a few tips:
Use one or two more eggs than stated and skip sugar in the batter.
For best result, fry in an cast iron pan and you will get crunchy sides and a soft middle. Enjoy with a jam of your choice.

The number two most cooked pancake in our house is Poffertjes!
They are small, puffy and you eat them with butter and icing sugar. Poffertjes originate in Holland and you often buy them at a market or in a pancake-house.
To make poffertjes you need a special pan and again it should be made of cast iron for the best result. And a recipe? Just google and you will find a bunch :-)


Occasionally we do "American pancakes" for breakfast. These are small and fluffy and we eat them with maple syrup and bacon :-)

Wine and Friends - The Show 2017

We attended the "Wine and Friends -The Show" wine fair yesterday. Arranged at cosy Hotel at Six, one of Stockholms recent design hotels, in the city center of Stockholm. Producers and winemakers from all over the world were represented. There were a fair amount of small producers but with both affordable and available wines. All wines we tasted had good quality, even if they not always suit our taste.

We took the chance to learn more about Slovenian and Austrian wines but also had a great talk to South African producer Steenberg. Constantia valley in South Africa is an area we still have to visit in our quest for all the great South African wines. 

There were of course also representatives from the old world of wine (France, Italy etc). We took the chance to learn more about Piccini our house wine producer's more premium range. 

As the name indicates it is not only wine but also great deli. We got the chance to compare different olive oils, cheeses and order organic meat.

It was a great venue, not too crowded. Exhibitors had good knowledge and also time to talk. We tasted many great wines. There were a good amount of organic wines. All in all a great Saturday afternoon. Looking forward to next year's fair.
