We just love pancakes in our house, all shapes and sizes of pancakes! As we are in Sweden, we usually eat Swedish pancakes, duh!
Joking aside Swedish pancakes are thinner and bigger then say American pancakes and the recipe differs a bit. We are not going to share our best pancake recipe, but will give a few tips:
Use one or two more eggs than stated and skip sugar in the batter.
For best result, fry in an cast iron pan and you will get crunchy sides and a soft middle. Enjoy with a jam of your choice.
The number two most cooked pancake in our house is Poffertjes!
They are small, puffy and you eat them with butter and icing sugar. Poffertjes originate in Holland and you often buy them at a market or in a pancake-house.
To make poffertjes you need a special pan and again it should be made of cast iron for the best result. And a recipe? Just google and you will find a bunch :-)
Occasionally we do "American pancakes" for breakfast. These are small and fluffy and we eat them with maple syrup and bacon :-)
